Biscuits with a twist

My favorite meal time to cook of the day would be brunch. Now I love brunch because it mixes breakfast and lunch and I’m often eating in between that time frame. What I love to do is switch things up. I do have a live video stream that I do every Monday on Facebook Z.R.Z Catering called Monday morning, where I cook brunch items. So finding different things to cook is always a little challenging but if you’re like me you enjoy a challenge. So what I like to do is take  traditional recipes and just Spruce them up. One of my favorite things to cook is biscuits. I love making biscuits from scratch. I became inspired by the sweet potato biscuit. I love sweet potatoes and it spruced up something that I already make. For the sweet potato biscuits all you need is

1 large roasted sweet potatoes

2 tablespoons of light brown sugar

2 quart cups of buttermilk

2 sifted cups of flour

2 ½ tsp of baking powder

1/2 tablespoon of baking soda

8 tablespoons of cold butter

a pinch of salt

Now what you want to do is combine Your dry ingredients in a bowl make sure your dry ingredients of stirred very well. Then you want to break up your cold butter into the dry ingredients. You want to do this with your hands. Then once you have that mixture  of a good consistency you want to add your sweet potatoes and buttermilk. Let rest for 30 minutes to an hour if using a cuter. once you’ve gotten your dough rested roll out your dough and use cutter to create your biscuits. If You’re using a tbsp let rest for five minutes then create your biscuits. Bake in oven at 350 degrees for 12 to 14 minutes or until golden brown.
